Blueberry Mug Cake


If you are on Pinterest, then I am sure you have seen all of the mug cake pins such as chocolate, chocolate peanut butter, cinnamon, peanut butter, etc… I of course pinned all in hopes to try them in the near future.  About a week ago I finally attempted at one of the delicious and mouth watering mug cakes- Blueberry Mug Cake from Kirbie’s Cravings blog.

Ingredients (for 1 mug cake)

  • 4 Tablespoons all purpose flour
  • 5 Tablespoons white granulate sugar
  • 1/2 tsp baking powder
  • 1 egg (or egg substitute)
  • 3 Tablespoons milk
  • 3 Tablespoons oil
  • 7-8 fresh blueberries (or more!)

Directions: Mix all ingredients, except for blueberries in an oversized mug until smooth.  Drop in fresh blueberries.  Heat in the microwave for about 1 1/2 minutes.  Let cool for 1-2 minutes.  Eat while warm.  You can leave it in the mug or take it out!

The cake may not look too appetizing from my photos, but as you can see, it is super moist!  I sprinkled a little but of powdered sugar on top for some extra sweetness.  The warm cake would also be great with a scoop of vanilla ice cream, or some whipped topping!  Also, if you are not a big blueberry fan, you can always add strawberries, blackberries, or raspberries!  If you are craving chocolate- adding chocolate chips would be a perfect addition.

Definitely looking forward to trying more mug cakes in the future, and possibly making a creation of my own!
